Growing Conditions
Stephen and Prue Henschke, fifth-generation winemakers at the family cellars at Keyneton, selected Lenswood in 1981 as a vineyard site in the Adelaide Hills. At 550m, the Lenswood vineyards offer not only beautiful views over the traditional vine country but also higher rainfall and humidity at the right time of the year, cooler temperatures to retain high natural acidity, and still enough sunshine to fully ripen the grapes.
Nose
Complex aromas of green apple, fragrant citrus, lemon curd and cherry stone, with delicate nuances of toasted brioche and nougat.
Palate
Rich flavours of apple, citrus, red cherry and nougat, are beautifully balanced on the palate with layers of texture, an elegant bead, and bright acidity, that provide a generous mouthfeel and long, dry finish. A perfect aperitif.
Appearance
Pale yellow gold with green gold hues.
Food Pairing
JAMON WITH FRESH BLACK FIGS | The Johanne Ida Selma Lenswood Blanc de Noir MD, a multi-vintage mature disgorged pinot noir sparkling wine, is a delectable pairing for melt-in-your-mouth jamon and figs.
***Ingredients***:
- 12 slices jamon (we use great local jamon from San Jose Smallgoods in South Australia)
- 6 fresh black figs in halves
***Method***:
1. Wrap one slice of jamon around one fig half and place in a small serving dish.
2. Repeat for all slices.
***Makes 12 servings.***
Aging
The wine was subsequently bottle fermented and left on lees in bottle to age. Multiple vintages from 1997 to 2013 were combined in an assemblage-style blend in August 2015, as a multi-vintage, mature disgorged blanc de noir.
Bottling
The wine is sealed under a stainless steel closure to allow the wine to knit together and retain its bottle-age complexity.
